I would look at the state standards and curriculum at the states with high rates of Latinos. (FL, TX, CA) as a starting point…
Google North Carolina curriculum, get the website (forgotten it), go to the curriculum tabs and then the grade levels. All sorts of good stuff in there, particularly the English acquisition curriculum.
